The optimal harvest time is determined by a comprehensive monitoring of ripening, in which the evolution of all the parameters that determine the quality of the juice is monitored.

This follow-up is completed by sensory analysis, ie, tasting the grapes to get the best possible wine.

 

In this area, due to the altitude and weather the harvest is earlier than in other wine regions of Almeria,
carried out in early September.

Processes flowering vine is 15/20 days earlier than before in other areas, this makes the grape concentrate more on sugars and fruit flavors are ahead.
